Dal Tadka – Chef Sundar Style


Toor dal – ½ cup
Masoor dal – ¼ cup
Moong dal – ¼ cup
Tomatoes – 2, finely chopped
Onion – 1
Cumin seeds – ¼ tsp.
Garlic – 1.5 tsp.
Green chilli – 1
Red chilli – 1
Red chilli powder – ½ tsp.
Turmeric powder – ¼ tsp.
Cumin powder – ¼ tsp.
Ginger – 1” piece, julienned
Ghee – 1 tbsp.
Lemon juice – 1 tbsp.
Salt to taste
Oil – 3 tbsp.
Ghee – 1 tbsp.

For tempering
Ghee – 2 tbsp.
Cumin seeds – ¼ tsp.
Garlic – ½ tsp. chopped
Red chilli – 1
Kashmiri chilli powder – 1 tsp.


  1. Pressure cook the dals separately. The toor dal in one and the other two dals in another.
  2. In a pan, heat oil and add in one red chilli together with cumin seeds and chopped garlic pieces.
  3. Now add in the finely chopped green chilli. Saute. Next add in the chopped onion pieces and mix well. Cook till onion turns transluscent.
  4. Add in a bit of salt, turmeric, red chilli powder and saute for a minute.
  5. Next add in the tomato pieces and cook well till tomatoes turn soft and mushy and oil separates. If you think it might burn, add in a bit of water about 1 tbsp.
  6. Now add in the dals and the water they were cooked in. let it come to a boil. You can add more water to adjust the consistency.
  7. Once it is boiling, add in cumin powder, ginger juliennes, ghee and mix well. Turn off the stove and add in the lemon juice. Stir once again.
  8. Do the tempering. Heat up the ghee and add in the ingredients under tempering. Saute and pour over the dal. Dal Tadka is ready to serve.
