Spicy Veg Pulav | Flavoured Rice Recipe

I should thank my neighbour for this recipe. Otherwise I would have never bothered to try a new style of rice; especially with the ground masala. Such a sweet lady Mrs. V. , always encouraging me to try out new dishes and teaching me so many things along the way.

I gave a bit of the Veg Pulav for my parents to taste. They simply loved it and wanted more. Yay !!! I forgot to take a nice picture, just managed one on the go -Just before nothing was left of it. Here’s how I made it.

Ingredients

Basmati rice – 1 cup
Chopped Onion – 1
Mixed vegetables  – 3/4 cup ( I used beans, carrot, peas, cauliflower , babycorn and potato)
Red chilli powder – 1 tsp.
Sambar powder – ½ tsp. (optional – it just gives a different dimensional taste)
Salt to taste

To grind into a masala

Coriander leaves – 2 stems
Mint leaves – 10
Green chillies – 2 or 3
Garlic – 4 pods
Fennel seeds – 2 tsp.
Cardamom – 1
Clove – 1
Star anise – 1/2

To temper

Ghee – 2 tbsp.
Oil – 1 tbsp.
Cumin -1 tsp.
Bay leaf – 1

Method

  1. Soak rice for half an hour. Keep aside.
  2. Grind the items with little water to a smooth paste.
  3. Chop vegetables to desired size. Slice the onion.
  4. Heat pressure pan and add oil and ghee. Then add the items to temper, one by one.
  5. Next add the onions and fry till transparent.
  6. Now add in the ground masala.
  7. Then add sambar powder and fry on a medium flame for 2 mins.
  8. Add the mixed vegetables except cauliflower.
  9. Fry well for 2 mins and add the drained soaked rice. Give a good mix.
  10. Add 1 and half cups of water, salt and chilli powder and mix well. Bring to a boil. You can add another ¼ cup of water if you like it more soft
  11. Now add the cauliflower at this stage. Mix well and cover with lid.
  12. Keep on medium flame and cook till done. (max.3 whistles)
