Ingredients
For white sauce
Milk – 1 cup
Maida – 1 tbsp.
Butter – 1 tbsp.
Salt – to taste
Pepper powder – 1 tsp.
For spinach corn mix
Spinach / palak – 5 bunches,
Corn kernels – ½ cup boiled
Salt to taste
Pepper to taste
Herbs seasoning – 2 tsp.
Parmesan cheese – ¼ cup
Butter – 1 tbsp.
Method
For white sauce
- Put a vessel on the stove and add the butter into it till it melts, add the maida and mix it well so that no lumps are formed.
- Slowly add the milk, stirring all the while. Continuously mix it so that it does not stick to the bottom of the vessel.
- Once it gets a light boil and gets slightly thick like a sauce, add in salt and pepper and turn off the stove.
For the spinach corn mix
- In another vessel, boil water and blanch the spinach. Chop and keep aside.
- In a saucepan, add butter and once it melts, add in the corn and spinach and give it a good mix.
- Add salt and pepper, herbs seasoning and white sauce to it. Mix thoroughly.
- Once it looks well blended add the parmesan cheese and mix well.
- Check for taste and switch off the stove.
Note –
It can be eaten as it is without any accompaniment or you can always have a couple of slices of bread to go with it.
