I should thank my neighbour for this recipe. Otherwise I would have never bothered to try a new style of rice; especially with the ground masala. Such a sweet lady Mrs. V. , always encouraging me to try out new dishes and teaching me so many things along the way.
I gave a bit of the Veg Pulav for my parents to taste. They simply loved it and wanted more. Yay !!! I forgot to take a nice picture, just managed one on the go -Just before nothing was left of it. Here’s how I made it.
Ingredients
Basmati rice – 1 cup
Chopped Onion – 1
Mixed vegetables – 3/4 cup ( I used beans, carrot, peas, cauliflower , babycorn and potato)
Red chilli powder – 1 tsp.
Sambar powder – ½ tsp. (optional – it just gives a different dimensional taste)
Salt to taste
To grind into a masala
Coriander leaves – 2 stems
Mint leaves – 10
Green chillies – 2 or 3
Garlic – 4 pods
Fennel seeds – 2 tsp.
Cardamom – 1
Clove – 1
Star anise – 1/2
To temper
Ghee – 2 tbsp.
Oil – 1 tbsp.
Cumin -1 tsp.
Bay leaf – 1
Method
- Soak rice for half an hour. Keep aside.
- Grind the items with little water to a smooth paste.
- Chop vegetables to desired size. Slice the onion.
- Heat pressure pan and add oil and ghee. Then add the items to temper, one by one.
- Next add the onions and fry till transparent.
- Now add in the ground masala.
- Then add sambar powder and fry on a medium flame for 2 mins.
- Add the mixed vegetables except cauliflower.
- Fry well for 2 mins and add the drained soaked rice. Give a good mix.
- Add 1 and half cups of water, salt and chilli powder and mix well. Bring to a boil. You can add another ¼ cup of water if you like it more soft
- Now add the cauliflower at this stage. Mix well and cover with lid.
- Keep on medium flame and cook till done. (max.3 whistles)
