Ingredients
Brinjal(purple) – 200 gms.
Peas – 50 gms., boiled
Coriander – ½ small bunch, chopped
Green chillies – 3 to 4
Mustard seeds – 1 tsp.
Cumin seeds – 1 tsp.
Split urad dal – 1 tsp
Oil – 2 tbsp.
Salt to taste
Method
- Heat oil in the kadai and add in the mustard seeds, cumin seeds, split urad dal and green chillies. Saute.
- Now add in the chopped brinjal pieces, a little salt and stir well. Cover and cook.
- When brinjals change colour and are semi cooked, add in the boiled peas, a bit more salt and stir well. Cover and cook for the flavours to blend in.
- Lastly, add in chopped coriander and stir to combine.
- Serve hot with rice.
