Brinjal Peas Dry Veg | Vankaya Batani Kura

Ingredients

Brinjal(purple) – 200 gms.
Peas – 50 gms., boiled
Coriander – ½ small bunch, chopped
Green chillies – 3 to 4
Mustard seeds – 1 tsp.
Cumin seeds – 1 tsp.
Split urad dal – 1 tsp
Oil – 2 tbsp.
Salt to taste

Method

  1. Heat oil in the kadai and add in the mustard seeds, cumin seeds, split urad dal and green chillies. Saute.
  2. Now add in the chopped brinjal pieces, a little salt and stir well. Cover and cook.
  3. When brinjals change colour and are semi cooked, add in the boiled peas, a bit more salt and stir well. Cover and cook for the flavours to blend in.
  4. Lastly, add in chopped coriander and stir to combine.
  5. Serve hot with rice.
